Cooking from scratch (or mostly from scratch) can be time consuming. Add the thought of dirtying a bunch of dishes, and you may want to avoid stepping foot into the kitchen. I was in this boat one day, but needed to do some meal prep for the week. Sheet pan meals are always a good go-to for this type of situation. Anytime I can do some chopping and dump onto a pan for some roasting, I am a happy camper. This meal reheats well and can be eaten multiple days in a row. We love it so much that we do just that!
This sheet pan bake has a base of sweet potatoes. Since potatoes and rosemary are always a perfect pairing, I knew I had to add fresh rosemary to the dish. If you do not have fresh rosemary on hand, you can always use ground rosemary or another herb of your choice. Sage would be a great option.
Roasting apples with cinnamon and pecans brings an inviting smell to your house and those ingredients also pair well with sweet potatoes. The pecans and coconut oil in this bake are tasty, healthy fats that will keep you full longer and fuel your brain.
Whole30 compliant sausage can be tough to find. These Chicken and Apple Sausages from Aidell’s are some of our faves and are compliant. Aidell’s makes other flavors, but not all are compliant. Friendly reminder, if you are on Whole30 make sure and read your labels! We find these sausages at most every grocery store around us, including Sam’s and Costco. Although these sausages do not have any added sweetener (yay!), they taste slightly sweet due to the apples in them. They make a great addition to your meals anytime of day.
This bake is a great option for an egg-free breakfast. However, if you can eat eggs I highly recommend you top your plate with a fried egg. Let the gooey, deliciousness that only an egg yolk can bring to a dish take this meal to the next level!
