One of the most difficult items for us to find when on a Whole30 round is breakfast sausage. I am not sure why this is the case, but most brands have some form of sugar or other non-compliant ingredients in them. It is sooo frustrating how much sneaky sugar is in our food! Instead of spending a ton of money and ordering from companies online, I set out to make a seasoning blend to make our own breakfast sausage. You can tweak to your tastes and to fit any recipe you need Whole30 sausage for or if like us, you try to avoid sugar whenever you can.
You can use this sausage in so many different recipes. Use in one of our fave recipes that we found on our last round of Whole30: Paleo Whole30 Sausage Gravy. We all seriously licked our plates clean with that one! Or you can use in our Whole30 Egg Sandwich Recipe: Whole30 Egg Breakfast Sandwich.

- 1 Pound Ground Pork
- 2 1/2 Teaspoons Dried Sage
- 1/2 Teaspoon Salt
- 1 Teaspoon Ground Black Pepper
- 1/4 Teaspoon Ground Nutmeg
- 1/2 Teaspoon Ground Thyme
- 2 Teaspoons Dried Oregano
- 1/8 Teaspoon Cayenne Pepper
- Cooking Oil, of your choice

- Add all ingredients to a bowl. Mix with hands until all seasonings are incorporated. You can make into patties or leave as is if you want it in pieces.
- Heat a cast iron skillet or large pan over medium heat. Add a small touch of oil to the hot pan and swirl it around, if not using a non-stick pan. Add the sausage patties or the sausage to the pan.
- If cooking patties, cook a few minutes on each side until the patties are browned and cooked throughout.
- If not using patties, use a spoon or a ground meat chopper to break up the sausage as you brown it. Cook until browned throughout.
